Scropino with Apple Juice Foam

Ingredients
- 200 gram Lemon Sorbet
- 60 gram Vodka
- 60 gram Prosecco
- 250 gram Apple Juice
- 2 gram Soy Lecithin
- 1 lime (for garnish)
- mint leaves (for garnish)
Directions
- Blend the lemon sorbet, vodka, and prosecco together in a blender until smooth. Pour the mixture into glasses, leaving room for the foam.
- Combine the apple juice and soy lecithin in a tall, narrow container. Use a handblender (or immersion blender) to blend the mixture until it begins to foam. Let the foam stabilize for a minute.
- Spoon the apple juice foam on top of the Scropino in the glasses. Add the lime and mint for garnish. Serve immediately.
