Pear Pearls

This refreshing and unique dish is made with a combination of our Special Ingredients, including fresh pear juice, Sodium Alginate, Calcium Lactate and Demineralised Water. The result is a burst of juicy pear flavor in every bite. To add a touch of acidity, a splash of lemon juice is also included.

Pear Pearls Recipe

Ingredients
- 100 gr Pear juice
- 1 gr Sodium Alginate
- 200 gr Demineralised Water
- 4 gr Calcium Lactate
- Lemon juice
Directions
- Blend the Demineralised Water and Calcium Lactate.
- Quarter the pears and put them in a dish with lemon juice. Then using an extractor, extract the pear juice.
- Blend the juice with the Sodium Alginate.
- Heat on medium heat to remove the air from the mixture.
- Fill the Spherificator Bottle with the mixture.
- Use the Spherificator Bottle to drip the juice into the Demineralised Water and Calcium Lactate mixture.
- Rinse the pearls with water.
