So if you rinse the spheres in the last step with water, how do you store the mojito spheres until you want to serve them ?
Thank you for the compliment. As for the mojito spheres: You can indeed make them in advance and store it in a neutral oil (e.g. sunflower oil) and rinse it before serving (briefly scoop it out in a water bath with a perforated spoon) and then serve instantly. However, our preferred method is tofreeze it in advance, and to take it out of the freezer and to finish it in the alginate bath just in before serving- it is tastier and more fun: your guests will love to see it and you immediately have a nice story to explain the basics of spherification. To speed up the defrosting process, you could warm the alginate bath to about 50 degrees.
