Chamomile Foam Ingredients
- 350 gr chamomile tea
- 50 gr lemon juice
- 150 gr sugar
- 6 gr Citric Acid
- 1.5 gr Easy Whip
Rosehip & Violet Meringue Ingredients
- 150 gr cranberry juice
- 200 gr rosehip tea
- 100 gr sugar
- 2.5 gr Easy Whip
- 1 gr Citric Acid
Directions
Chamomile Foam Recipe
- Combine all Chamomile Foam Ingredients and blend well together
- Place into Cream Whipper and Carbonate
- Chill in the fridge until ready to serve
Rosehip & Violet Meringue Recipe
- Blend the Cranberry Juice, Rosehip Tea, Sugar, Easy Whip and Citric Acid together.
- Whip the mixture to a light foam using a stand mixer
- Spread onto grease proof paper
- Sprinkle with crushed crystalised violet
- Dehydrate in a dehydrator or low oven for 10 hours
- Combine Rosehip & Violet Meringue with Chamomile Foam
