Blueberry & White Chocolate Muffins Recipe (Gluten-Free)

- 175 gr unsalted butter
- 60 gr gluten-free plain flour
- 5 gr Xanthan Gum
- 4 drops Cinnamon Flavour Drop
- 100 gr ground almonds
- 225 gr sugar
- 60 gr white chocolate grated
- 200 gr blueberries
- 5 gr Bourbon Vanilla Extract
- 6 eggs lightly beaten
- 5 gr icing sugar Sieved
Directions
- Preheat the oven to 180°C.
- Melt the butter in the a small pan (or microwave)
- In a large bowl, mix together: Gluten-free plain flour, Xanthan Gum, Cinnamon Flavour Drop, almonds, sugar, grated white chocolate and blueberries
- Gently stir in: Bourbon Vanilla Extract, the eggs and the melted butter
- Divide the mixture between 12 muffin cases
- Bake for 30 minutes or until the muffins are well risen and firm
- Cool on a wire rack
- Dust with icing sugar and serve
