Chicken stock
Salt to taste
Olive oil
Instructions
Blend the mushrooms, then place them into a pan with a small amount of olive oil and add the chicken stock.
Cook on medium heat for 10 minutes.
Filter with a sieve and place in another pan.
Gradually add the Agar Agar whilst stirring / whisking.
Bring to the boil at 100℃.
Pour into a tray and cool down to 20℃.
Cut into small circles using a small cookie cutter.
Arrange several disks in a circle on a separate plate.
