Mushroom Champignon Discs

Ingredients
  

  • 200 gr Mushrooms champignon
  • 200 ml Water
  • 4 gr Agar Agar
  • 300 ml Chicken stock
  • Salt to taste
  • Olive oil

Instructions
 

  • Blend the mushrooms, then place them into a pan with a small amount of olive oil and add the chicken stock.
  • Cook on medium heat for 10 minutes.
  • Filter with a sieve and place in another pan.
  • Gradually add the Agar Agar whilst stirring / whisking.
  • Bring to the boil at 100℃.
  • Pour into a tray and cool down to 20℃.
  • Cut into small circles using a small cookie cutter.
  • Arrange several disks in a circle on a separate plate.
