Wash the fruit thoroughly and cut it into small pieces.
Add the fruit and water to a pot and bring to a boil.
Reduce heat and let simmer for 15 minutes.
Remove from heat and let cool for 5 minutes.
Add Pectinex and stir well.
Let sit for 30 minutes.
Strain the mixture through a fine mesh strainer or cheesecloth.
